We were looking for something special for Valentine's Day meal, and we sure did find it at the Tennessee Truffle in Sanford.
I loved that a lot of the dishes incorporated nuts like walnuts and pistachio.
Each dish was so creative.

Six minute fried Big Lazy Farms Egg (Sanford, FL) Sal de Gusmano (sea salt, toasted and ground agave worms and Chile CosteƱo), Toasted Rye, Whole Grain Aioli, Pickled Cherry Salad
Almond milk poached Salmon
Asparagus, Olives, Hickory Smoked Almonds, Puffed Wild Rice
Pan Roasted Duck Breast
Cara Cara Orange Supremes, Macadamia Nut Butter, Roasted Cauliflower, Duck Jus
Roasted Lamb Lollipop
Lavender/Goat Cheese Panna Cotta, Chioggia beer, golden beet, Heirloom Cherry Tomatoes (Waterkist Farms, Sanford, FL) Beet & Kale Greens, Pistachio Dust - I really enjoyed the strong herbs and seasoning on the lamb mixed with the mild milkiness of the goat cheese Panna Cotta.
